Parmigiana is traditionally cooked with aubergine, but this recipe instead features courgette as the main ingredient - it makes the dish slightly sweeter and more delicate but still incredibly tasty.

What to bring
Ingredients (for four people):

You can divide the ingredients in half and use a smaller baking tray if you'd like to make a smaller portion.

3 big courgettes (about 700g).
150g of smoked ham (this can be omitted if you prefer a vegetarian dish).
3 x smoked provola balls or Emmental cheese (normal mozzarella will also work fine but try to buy the dry one called scamorza otherwise the dish might get a little soggy! You can find it in any Italian deli).
100g grated Parmigiano Reggiano.
50g bread crumbs.
Salt and black pepper.
Extra virgin olive oil.
Basil leaves.

For the white sauce (also called besciamella):
1 pint of milk (about 550ml).
30g butter.
30g plain flour.
1 x garlic clove.
Half teaspoon nutmeg.
Salt and black pepper.
Fresh or dried sage.

Utensils:
Chopping board.
Baking tray about 24cm.
Pot for the white sauce.
Spatula.
Knife and fork.
