Please note, if you want to cook this recipe for more people, you will need to calculate 1 egg plus 100gr of flour for each additional person, plus increase all the other ingredients accordingly.


For the fresh pasta dough:

200gr of 00 flour or plain flour too (it would do the magic)

2 medium eggs


For the filling:

300gr of ricotta cheese from cow's milk

500gr of fresh spinach

1 medium egg

50gr of grated Parmesan cheese

A pinch of nutmeg powder

Black pepper and salt to taste

1 garlic clove


1 tomato can (400gr)

1 small onion

olive oil

few basil leaves

2 mozzarella balls

grated parmesan cheese


Optional white sauce (Besciamella sauce):

1lt of milk

100gr of flour

100gr of butter

A pinch of nutmeg

Salt and black pepper to taste


Utensils required:

a PASTA MACHINE is ideal, alternatively, you can use a rolling pin (please bear in mind it will be more difficult)

Filler bag with nozzle (like the one to decorate cakes)

1 big bowl

1 grater

Cling film

1 chopping board

1 frying pan

1 big pot to boil water

1 small pot to cook the sauce
