Aubergine parmigiana is one of the most delicious and famous Italian dishes out there. Only a handful of ingredients are used, making it ideal for a last-minute dinner party main that packs a punch. Full of flavour, this dish is a symbol of all things delicious in Mediterranean cuisine; tomato, eggplant, basil and cheese! During this beginner-friendly virtual cooking class, your friendly teacher and talented chef, Luca, will guide you step-by-step as you cook along at home. By the end of this online cooking workshop, you'll not only have a new recipe to add to your repertoire and some authentic Italian cooking skills, but also a delicious hot aubergine parmigiana waiting for you to dig in! Knowledge required Beginner-friendly! What to bring Ingredients for four people: 2 x big aubergine (about 700gr). 5 x tablespoons flour, to dust the aubergine. 3 x eggs beaten. Frying oil. 2 x tomato cans (passata or chopped). Extra virgin olive oil. 1 x clove of garlic. Basil leaves. 3 x mozzarella balls. 100gr of grated Parmigiano Reggiano. Salt and black pepper. Utensils required: Knife and fork. Cutting board. 1 x bowl. 1 x frying pan. 1 x Cooking pot for the sauce. 1 x ceramic baking dish (approx 20cm x 25cm). A grater.
